If you have some spare cash, the two excursions that I would recommend are the Seaplane that will take you on a picturesque flight around the islands and drop you off in Malta for the day. Be prepared to jostle for a window seat to be able to see the spectacular coast line. The plane flies pretty low so you can see a lot of details.
The next excursion is to hire a boat for the day. We paid out the extra and had the boat to ourselves which is terrific as the captain will take you where you want to go, we were provided with coffee and afternoon tea and cooked fresh lunch of fish which has been caught that morning. We stopped off at a number of bays and swam with the fish. This was a marvelous experience. The captain told us to jump in the water with our snorkels and then he gave food to the fish. We had countless fish all swimming around us much like a huge aquarium.
